Recipes, share yours

We recently went to a theme park and they sell funnel cakes(at a totally outrageous price!!), they are SO easy to make and a lot of fun too!!

Funnel Cake

Ingredients:

1 egg
2/3 cup milk
2 tbsp. sugar
1 1/4 cup flour
1/4 tsp. salt
1 tsp. baking powder

Directions:

1. Beat egg and milk. Mix all other ingredients and slowly add to the egg mixture, beating until smooth.

2. Using a funnel, drop into hot oil working from center outwards. Remove from the oil when golden brown and crispy.

3. Sprinkle with powdered sugar and serve.

We like to have ice cream, whipped cream and berries on ours, YUMMY!!

Gatorade and GGV:

Ingredients:
  • Tall Glass (You can pour the contents directly on your face, but I don't think it will work as well)
  • Two shots, Measured, Grey Goose Vodka (Standard, non-flavored. Flavor will interfere with the Gatorade)
  • 12 Ounces Gatorade, Suggested Flavors: Gatorade Rain Lime, Gatorade Rain Berry
  • Suggested that Gatorade be served very cold or in a chilled glass
Enjoy a refreshing beverage in which you can, by no means, taste the alcohol.

...But you'll feel it.

Hey BR that sounds really yummy! I wonder if it would work with Rice Flour? I am allergic to wheat (flour), gluten, oats, corn, soy, peanuts so I have to be careful how I fix something. I love funnel cakes too and yes they to charge way too much for them!!

This was soooooooo YUMMY!!! VERY, VERY easy to make!! I doubled the recipe when I made it. Traditional Enchilada sauce has soy and wheat in it and so I have to make mine homemade (tasted better too!).


Homemade Enchiladas

1 tsp. of olive oil
1 cup shopped onion
1 (16oz) can diced tomatoes
1 (8oz) can tomato sauce
1/2 tsp. dried basil
1/2 tsp dried oregano
1/2 tsp ground cumin
1/2 cup fresh cilantro
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
8 tortillas
1 cup Daisy Sour Cream

Heat oil in a heavy skillet over medium heat. Add onion and saute about 4 minutes. Add tomatoes with juices, tomato sauce, ground cumin, basil, cilantro and oregano. Bring to boil. Reduce the heat, cover and simmer for 15 minutes. Remove from heat.

Preheat oven 350 degrees. Grease a 13 X 9-inch baking pan. Combine the cheeses in a bowl. Dip each tortilla in the sauce to soften. Place 4 Tablespoons of cheese into tortilla. Roll up and place, seam side down, in the pan.

Add the sour cream to the remaining sauce mixture, stir until blended. Pour over tortillas. Top with remaining cheeses. Bake for 35 minutes, or until heated through. Garnish with 2 Tablespoons of fresh cilantro.

NOTE: For those NOT allergic to corn you can use normal corn tortillas. I used Wheat free/Gluten Free Flour Tortillas. They came out soooooooo yummy! Husband and daughter went back for seconds.

Variations:

Beef: 1/2 pound of beef with the onions. Drain if necessary.

Chicken: 4 skinless, boneless breast halves cooked and cut in half. Place a strip of chicken and 2 Tablespoons of cheese on each tortilla.

Hey, Ms Swattie, can you get dried chilies where you live? If you can I can give you a much simplier recipe for enchilada salsa. Look for something called Chilies Anchos. They're not hot, just spicy.

I can't eat anything that is spicy either. Spicy really kills my stomach! I'm basically limited to plain foods (use lots of herbs and seasonings). Even the store bought enchilada sauce is spicy to me! It actually feels like it is burning going down my esophagus. I usually end up drinking a gallon of milk!

Nothing spìcy?? No chilies?? OMG! I don't think I could live without chilies, all of them, the fresh and the dried. They're such a part of the food. Well, there's a fresh sauce that's good, all you have to do is leave out the Serrano chilies! You take a tomato, dice it, a small onion, ditto. Then add cilantro, salt and lime juice. Serve it over EVERYTHING! For those who can eat chiles, put in the quantity of Serranos that you like.

That sounds really good. Yeah, even Taco Bell mild sauce is spicy to me. Sean LOVES FRESH Jalepeno Peppers. Says they are sooooooo much better than canned (like I would know!). I made homemade BBQ Sauce today for our BBQ Chicken tonite and I followed most of the recipe and added the Crushed Red Peppers. I didn't know they were HOT! Well, at least for me! WOW! I couldn't even eat it. My pup loved it though! LOL Everyone else really enjoyed it but I couldn't eat it. My stomach is still bothering me. And I can't take anything for it because of the medicine I took for my Fibro.

Hooters Hot Wings

1 Pack of Hooters Flour (can get at yr local grocery store)
1 Jar of Hot Hooters Sauce (can buy from same store)
2 or more lb. of uncooked chicken wings
2qt. canola cooking oil
1 case or more of yr favorate beer


1. Wash and cut the wings, throw the funny looking (small) piece away.
2. Coat all wing pieces with the Hooters flour and lay them on a cookie sheet
3. Heat canola oil in cookin pan
4. Deep fry wings until done and golden brown, then drain wings
5. Pour 1/4 Hooters Hot Sauce into a covered bowl, heat in microwave 20 sec.
6. Put about 10 wings at a time into the bowl w/Hooters Hot sauce, cover bowl, then shake the bowl to allow the wings to get completely covered.
7. Do this for the remainder of wings, re-supplying the sauce as needed.
8. Plate em up, ensure that the beer is ice cold......Enjoy!
